研究内容
围绕食品及其原料中污染的真菌毒素,开发绿色高效的生物降解新方法。通过从自然环境中分离功能性微生物,结合多组学技术、蛋白质化学及计算机模拟,解析微生物降解真菌毒素的分子基础与作用机理,构建基于新型毒素降解酶基因的污染防控新策略。
